The boys absolutely love fresh fruit, so I decided to create a delightful treat for their toast in the morning that they won’t be able to resist.

**Ingredients:**
– 8 ripe peaches, peeled, pitted, and sliced
– 2 cups of granulated sugar
– ½ cup of brown sugar
– 1 teaspoon of pure vanilla extract
– 1 tablespoon of fresh lemon juice

To make peeling the peaches a breeze, simply cut a small “X” on the top of each peach and blanch them in boiling water for about 30 seconds. This method streamlines the process and ensures you can easily slice them without any hassle. As you slice, be sure to scoop out any dark pieces from the center; this prevents unwanted crunchy bits in your delicious preserves.

In a large pot over medium heat, combine the granulated sugar, brown sugar, vanilla, and lemon juice. Stir the mixture until all the sugars dissolve completely, creating a sweet foundation. Next, gently fold in the peaches, ensuring they are well-coated in the sugary mixture. Increase the heat and bring it to a boil for 20 minutes. Afterward, remove the pot from the heat, give it a good stir, and let it rest for 10 minutes. Repeat the boiling process until the mixture reaches a perfect temperature of 212°F.

Once it reaches that sweet spot, carefully transfer the hot mixture into a clean jar with an airtight lid and allow it to cool, then pop it in the refrigerator.

**Note:** To seal the jars effectively, be sure to use the water bath method, ensuring your preserves stay fresh and delicious for longer. Enjoy every spoonful of this homemade goodness!

Ingredients

  • 8 peaches peeled, pitted and sliced
  • 2 cups of sugar
  • ½ cup of brown sugar
  • 1 teaspoon of vanilla
  • 1 Tablespoon of lemon juice

Instructions

An easy way to peel the peaches is to cut the top off and blanch them. When you go to slice them, make sure to scoop out the dark pieces at the center, or you’ll have crunchy pieces in your preserves. In a large pot over medium heat, add the sugars, vanilla, and lemon juice; stir the mixture until the sugars are dissolved. Now scoop in the peaches, stir them, and coat them in the sugar mixture as much as possible. Turn the heat up and bring it to a boil for 20 minutes, then take it off the heat. Stir it and let it rest for 10 minutes. Now repeat the process until the mixture reaches 212℉. Once that is done, carefully scoop the hot mixture into a clean jar with an airtight lid and let it cool, then refrigerate.

Notes

To seal the jars, use the water bath method.
