We received some exquisite oxtail from the wonderful lady who sources our beef, and it was simply incredible.
**Ingredients:**
– 2 lbs. oxtail (or beef tail)
– ½ cup baby carrots
– 2 celery stalks, chopped
– 2 potatoes, peeled and chopped
– ¼ onion, diced
– 1 clove garlic, minced
– 2 teaspoons dried rosemary
– 2 teaspoons dried parsley
– Salt and pepper, to taste
– 2 cups beef broth
– 1 cup stout beer
– 6 oz. tomato paste
**Instructions:**
1. In a large bowl, expertly blend the beef broth, tomato paste, and stout beer. Stir until the tomato paste is fully integrated and smooth.
2. Add the oxtail to this flavorful mixture and allow it to marinate for a full 3 hours, letting the rich flavors infuse.
3. In a sturdy Dutch oven, combine the vibrant baby carrots, crisp celery, and hearty potatoes.
4. Introduce the marinated oxtail to the pot, pouring in the marinade, and sprinkle in the rosemary, parsley, salt, and pepper to enhance the taste.
5. Bring this delightful concoction to a lively boil over medium-high heat for 5 to 10 minutes, then transition to a gentle simmer for 2½ hours.
6. Serve this mouthwatering dish alongside a warm biscuit or roll for a truly satisfying meal.

Beef Ox tail stew
Ingredients
- 2 lbs. of Ox( or beef) tail
- ½ a cup of baby carrots

- 2 potatoes peeled and chopped

- 2 teaspoons of dried rosemary
- 2 teaspoons of parsley
- salt and pepper to taste
- 2 cups of beef broth
- 1 cup of stout beer
- 6 oz. of tomato paste
Instructions
In a large bowl, mix beef broth, tomato paste and and beef. Mix it until the tomato paste is no longer clumped. Noww place the ox tail into the mixture and let it marinate for 3 hours. In a Dutch oven, add the carrots, celery, and potatoes. Add the ox tail and marinate it in the pot, then add the rosemary, parsley, salt, and pepper. Bring to a boil over medium-high heat for 5 to 10 minutes, then let simmer for 2½hours, serve with a biscuit or a roll.
